I opened a ticket with the server owners, InPVP. They responded with: “I am so sorry that this has been an issue for so long, I totally understand how frustrating that is! Our dev team is actually updating the server version now and compressing the file sizes for our resource pack. They are hoping that this will eliminate any switch join issues! We should be back up and running shortly”

Happening to me too. I was able to play for a few hours yesterday but after a few hour break, I was receiving the same issues as OP. I did the same troubleshooting as OP and removed 300MB of old addons and worlds I don't use. I can connect to the server on my mobile device so know the server is still active. I am also using a Nintendo Switch.
