I was able to configure the Minecraft Discord so that I only get alerted when there new posts in the 'game-announcements' channel by muting all the other channels. I normally mute entire Discord servers to keep them quiet (except for '@everyone' posts), but that doesn't work for the Minecraft server, because (for whatever reason), the people who post to the 'game-announcements' channel don't include '@everyone' for major announcements.
