Had the same problem! It was my first Wither fight and completely expected to die, but I was dumb and decided to spawn him underground with a wireless connection. Not only will he not take damage but when ever I go near him my world keeps glitching and I keep falling through. Waiting for Minecraft support to reach back out to me and see if they can restore an old save file for me since I'm on xbox.
