I couldn't get it to crash again when I made sure I was not hitting the ground. Does this hold true in your case too, OP?

I'm guessing this is related to MC-47427.
The crash may actually be happening when you miss hitting the slime and hit a block instead, which is confirmed to crash the game. When I attacked slimes on the ground, it would sometimes crash, sometimes not. I then killed several slimes with a bow without problem, and then it also worked with a sword while I made sure I could not hit the ground.
