Have you checked if it's not something with your actual connection first?
e.g. if there's nothing blocking minecraft from connecting to the internet etc. ?
This is probably the fault of something on your side, I went into a creative world, placed some chorus plants, then relogged, and the plants are still there safe & sound. Maybe you can overload chunks in bedrock just like in java? lol, that would be funny.
TL;DR - probably fixed
Maybe if you have any addons/behaviors/resource packs check for errors in those, or maybe try doing a clean reinstall of the game - who knows maybe it would help
