This happens to me too, I think it's mostly on mobile that it happens. it started happening in the newest update.
Basically what happens is, when you press the "..." inventory button, your inventory opens, but it also thinks you're also trying to swing your hand. So even if you're not holding a block, your hand will swing no matter what. (but if you're holding a block you will place it when you open your inventory).
Also, if your split controls thing is over something like a barrel, you will see the open barrel texture when you press the inventory button, and even when you exit your inventory, the texture of the barrel remains open. The actual barrel storage does not open.
