I have had a similar issue in 1.16.40 windows 10 playing on a realm. The wither was suffocating in an end portal gateway and game crashed after wither got down to half health. The realm rolled back about 2 minutes and that wither got loose. After killing it and three others successfully, the game crashed, disconnected and rolled back 20 mins to the last save
