This is also occurring for me on Windows Bedrock v1.20.40. I've tried turning on and off the "Hide Hand" toggle, but it didn't work. It only reappears when I eat, as I have tested. The attached video is of me with a skin created in the dressing room with animated textures in first person POV when I eat. As shown, my offhand only appears when I eat, then it just disappears again.

It's happening again in Bedrock 1.20.40
