Could the cause of this issue be the very long game sessions?
I started seeing this problem in my world after I afk for awhile at my iron farm. I had all my trading villagers despawning, there were about 200 blocks away from the iron farm. Interestingly, the cats in the trading hall didn't despawn, but other pets, and horses with saddles, around my base did!. After that, all villagers from the iron farm despawn as well.
