I have the same issue. I didn’t realize realms had its own bug report section so I posted it in the bedrock section a few days ago. Still having the issue. And someone else commented on my post saying they had the same issue. Here’s a screenshot of mine:

Mobs like the axolotl won't generally spawn if you're standing in the same position, try moving away then coming back and see if anything changed. Goats won't always spawn in every mountain biome, you might have to go to a few to find some, as they're a bit uncommon.
Forgot to add, I think it may be because of the daylight savings time clock change. I was playing during it and so was the other person that commented on my post. They tried opting out and back in to the timeline and nothing has fixed it. My other member on the server is unaffected and was not playing during the clock change.
