I have been having thie exact issue since I started using my Windows 10 Minecraft as a host for my sons to connect to with their Bedrock editions from Kindle Fire tablets. It's is more common than not that when they connect their levels and inventories are wiped. As the original poster said, if they put everything into a chest before logging out, then it's fine.
However, they have time limits on their tablets, and if they can't get to a chest before their time is up, the game is quit forcefully, and that pretty much always wipes their inventory.
I have also had a couple of occasions where my Windows 10 machine has crashed while hosting the game, and that also wiped out their inventories (and saved location, levels, etc.)
I as the host am never affected by this. It doesn't seem like a common thing, as I can find little else on the Web about the problem. If there's anything I can do in terms of debug logs etc. I'm happy to do so.
