Alright, I had the vanilla data pack on. And the coral blocks do this whenever I put them in water. Here's the vid.

I have noticed the same with the spawn eggs. Their colors seem to be a bit off.
Oh sweet! It works now. Just renamed my "blocks" folder to "block", and my "items" folder to "item" and now it worked. I had no idea about the changes but now I know.
