I have deleted and reinstalled Minecraft and that hasn't fixed the issue either, it worked before the update, but I also am having trouble updating my phone so maybe if I can find a way to update my phone it may fix it ???

Yeah it's happening to me too, could try a new device, may be certain devices, I'm on a Nokia 3v.
