This issue is partially fixed.
After investigation we observed that:
Projectiles that getting destroyed after hitting Breeze:

• Snowball

• Egg

• Mundane Splash Potions

• Lingering Potions

• Thick Splash Potion

• Awkward Splash Potion

• Awkward Lingering Potion

• Ender Pearl

• Bottle o' Enchanting

Projectiles that still can deal damage to Breeze:

• Fireball

Projectiles that are not getting deflected:

• Small Fireball

• Llama Spit

• Shulker bullet

Can confirm this issue occurs on:
Platforms:

• Win 10

• MacOS 14.2
