My players and I are having the same issue on my realm.
Player one is on an Apple device and all lines of text they input into books change to #### as soon as the book is closed and opened again.
Player two is on a Nintendo and the last line of text glitches to ###, except when creating a second page of text which makes the entire first page switch to ###.
I (Microsoft Windows) am seeing intermittent glitches in my books, some numbers and letters are switching to ###.
None of this looks like censoring; we’re just logging coordinates of cool places around the world and the numbers are being censored. We also tested this with a full alphanumeric input and got the same results.
