I have experienced this bug any time on my realms server. It has happened both with mobs I have and have not interacted with. In the nether, the mobs still despawn. It has occurred with cows,sheep,horses, and donkeys. I have found these after I or another member went through a nether portal. All the farms have been near world spawn or in the nether (near nether portal from spawn).
