This is definitely a frustrating bug as I only noticed this after trading for hundreds of emeralds.
For some reason, the achievement will only track trades you do "manually", which means not clicking on the desired trade on the new left side of the trading UI, but using the old system on the right side and actually placing the item you are trading from your inventory into the trade slot first and taking the emeralds out.
It's still a major issue as the new system is much easier to use and there's no reason those trades should not be tracked.
