We have two switches, Android, iPhone, and iPad that all have this same issue. Open Minecraft app, it doesn't connect to Microsoft account, and they have to re-login.
We have rules on our Wi-Fi network, so children's screens are network disabled during certain hours. (But they are able to connect to the network, just no internet). What seems like it's happening is that the device is logged in as user: user123. Then connect to WiFi without internet, open Minecraft app, then it starts the Microsoft aka.ms/remote connect login. A better solution would be for the device to check that it can't reach Microsoft servers, and not lose the user session, and just say not connected to internet.
So that when we restore internet, they will stay logged in. Because we have to re-login to 3 devices a day sometimes.
