I have had the same issue with the wandering trader. I see the llamas still, but the trader has disappeared.

Another update, you can still interact with the Villager's AI : video
Ok I realise what is happening, my apologies. I found that the villager was drinking an invisibility potion and when day broke, the effect cleared (they drank milk)
