Please note, in the first and third screenshots, I am attempting to grab the iron ingots from my inventory. In the second screenshot, I was successful in highlighting and grabbing a stick from my toolbar, which demonstrates the bug only affects items stored in personal inventory.
It certainly sounds similar. I have just disabled the xbox game bar. I will write another comment stating whether or not this has fixed the issue.
