I will have this problem as well when I'm playing Minecraft Bedrock on my Nintendo Switch and on the pocket edition. I've noticed it will only happen when using a certain texture pack though (Toon Pack by Ready, Set, Block!). Maybe this is the case? It is possible the texture pack (if you use any that create this issue) could have a bug or glitch. The only way I know of to resolve this issue would be to mine the area the bed had been placed to return it to your inventory bar and then place it again
