I'm seeing the same issue locally. I'm able to attach a debugger, but no symbols, so here is the best I can do:
Unhandled exception at 0x7B36F700 (launcher.dll) in MinecraftLauncher.exe: 0xC0000005: Access violation reading location 0xCC0014C2
This is with version 2.1.7660.
That should be enough to give you a sense of where the problem is with the PDB symbols.
My kid is super excited to play this, so I'm happy to help debugging it too if you want to post the PDBs somewhere.
