Seems like intended behaviour. While sneaking the game prevents you from walkin onto, for example, cobwebs. It is reasonable to think that powder snow acts similarly.

Could not reproduce. Seems to be a performance issue in your end.
Check your OptiFine settings, you might have the setting that hides weather enabled.
Could not recreate. Can you confirm the realm is running 1.17? You can check it on the top left when you press F3.
Pause on lost focus means pausing the game whenever the window becomes unfocused.
While playing singleplayer the game will ALWAYS pause upon pressing Esc.
Once you open to LAN the game essentially becomes multiplayer, and it will NEVER pause upon pressing Esc.
We can try and help you if you attach the crash report.
You can find it under crash-reports/crash-<DATE>-client.txt inside your minecraft data folder.
The path for the data folder should be:
Windows: %appdata%/.minecraft/
MacOS: ~/Library/Application Support/minecraft/
Linux: ~/.minecraft/
maybe change all the "he/she" and "his/her" occurances for they and their respectively.
