Reconfirming this for MCPE 1.20.60, and adding on to particularly what user @LOLOX_HD said.

In my case, ZL and ZR are correctly considered LT and RT whereas the L and R shoulder buttons are LB and RB, all respectively.
What I have noticed is that ZL and ZR cease inputs whenever the sticks are tilting; specifically, while changing their angle.
To reproduce:
1. Map the Jump/Fly Up action to either ZL or ZR.
2. Enter any world.
3. Hold the remapped button (ZL or ZR) down. The player will jump constantly.
4. Continue holding this button and tilt either the L-Stick or the R-Stick any amount outside their deadzone. The player will stop jumping.
5. Release only the stick. The player will still not be jumping.

The D-Pad buttons (or arrow buttons for Joy-Cons) do continuously scroll in whatever direction they correspond to, even after the button is released. It seems through testing that these buttons get "stuck" sending their inputs on press. If another D-Pad button is pressed, the scroll will change direction; however, both directional axis' appear to get "stuck" separately. This is best seen in the player's inventory.
To reproduce:
1. Create a new world.
2. Open the inventory via the ** Crafting action (default: Y)
3. Press D-Pad Left. The cursor will scroll left constantly.
4. Press D-Pad Up. The cursor will scroll up and left constantly until it reaches the tabs at the top of the screen, where it will scroll to the left and loop around infinitely.
5 Press D-Pad Down. The cursor will now scroll down, but also still left. It should get stuck between certain selections in the crafting menu.
6. Press D-Pad Right. The cursor should scroll directly right.
7. Press D-Pad Down. Nothing will happen.
8. Press D-Pad Up. The cursor will scroll constantly across the tabs at the top again, but this time to the right.

The following better demonstrates why I believe the inputs are getting "stuck". Normally, when holding down the "Cycle Item Left" and "Cycle Item Right" actions, the hotbar selector moves only one slot over in the corresponding direction: it does not scroll when held. Multiple presses are needed to properly change slots in the hotbar. I use the D-Pad to cycle through my hotbar when on a controller, and thus I found out rather quickly on this version that the inputs are held down, or "stuck".
To reproduce:
1. Map the "Cycle Item Left" action to D-Pad Left, and "Cycle Item Right" action to D-Pad Up. Ensure that D-Pad Down and D-Pad Right have no action mapped to them.
2. Enter any world.
3. Press D-Pad Left. The hotbar selector will scroll only one slot left (or wrap around to the right-most slot).
4. Press D-Pad Left again. Nothing will happen.
5. Press D-Pad Up. The selector will scroll one slot right (or wrap back around).
6. Press D-Pad Up again. Nothing will happen.
7. Press D-Pad Down, then D-Pad Up. The selector will scroll another slot right.
8. Press D-Pad Up again. Nothing will happen.
9. Repeat Steps 7 and 8, but with D-Pad Right and D-Pad Left respectively. The results should be similar to those in said steps.
10. Press D-Pad Down, then D-Pad Left. Nothing will happen.

It is very strange and very annoying behavior, especially since I personally use the D-Pad to scroll through my hotbar and ZL to jump. Breaking blocks and even combat is virtually impossible while moving and/or turning, which is a very common ask from the game.
The only real workaround I have found is for the D-Pad "stuck" issue, which is to tilt either of the sticks any amount: this releases the "stuck" inputs... coincidentally the same thing that makes ZL and ZR practically unusable. Possibly the same underlying issue??

Device is a Galaxy A50. Tested using the 8BitDo Ultimate Pro Controller and the PowerLead Cute Racoon Switch Controller, both connected via Bluetooth. Controllers had no issues through the Android interface itself or in other Apps with Gamepad support.
