When I go into 3rd person while wearing the new Elytra my crosshair turns invisible.

I experienced similar issues. If you are using a resource pack: disable it. I did some troubleshooting, and for whatever reason my conduit texture (assets\minecraft\textures\entity\conduit), along with my water and breaking animation textures were causing the issue. I'm not sure why this is, but it seems like something was changed in the way that the game handles these resources, and older versions cause graphical issues.
