Done some tests, and I found out it has nothing to do with crossing chunkborders.
I locked a villager (mending for 14) in my house in a one block space, so he can not walk anywhere. (see my two screenshots)

He was there many (realtime) days playing MC.
I gone to the nether, and came back in Overworld
Travelled far away in the Overworld and came back via Nether, or in the Overworld.
He was always there! But yesterday, I slept in my bed - woke up - he was there - go downstairs to my storage room (5-10 blocks) under my house - came back after a few seconds because I forgot a shulkerbox - and he was gone! He could not walk over a chunkborder, the chunk wasn´t unloaded or something — but he disappeared just because!
