So, i was having the same issue on a vanilla server and couldn't find any fix for it, even though is a 4 year old problem... (thanks Mojang) I managed to fix it, what i did was install Starlight, an addon for Sodium (a Fabric mod, an alternative for Optifine). Now the problem is COMPLETELY gone, you guys should test it, Starlight also have a Forge version that works with Rubidium (Sodium for Forge) too.
