I have this same problem on the Series X and I have to keep deleting the resource packs to play minecraft.

This is also happening to me on Xbox Series X and when you open minecraft it loads then after it loads it freezes and crashes. You have to Uninstall minecraft and reinstall it to be able to play. This is also happening to my friend that plays on series X also. It only crashes if you have global resource packs on and try to open Minecraft.
