I have just started playing on on a friend's realm, PlayStation 5, and seem to be having the same behavior. I guess my game is fully up to date, I don't do anything special with it on the PS5
I place a lectern down, trade with a fresh villager, & buy the book that I want the villager to lock in with. Go off the reading window, go back into it a few minutes later, and the villager has a new set of trades. Those are locked in, not the ones I wanted.
