This issue is NOT RESOLVED. I have it consistently, at least once a play session on a Bedrock Realm running and created in 1.20.6. I will add, which I haven't seen mentioned by others, that you can fix the issue by dropper picking the glitched stack to your hotbar if it's not already on there rather than relogging.
I will add that I believe every time the stack size has only been incorrect by one or two items each time, and twice out the hundred or so times it's happened, it was a shulker box that I wasn't picking up with any other items.
