I've tested this too I think its a storage access issue there is a temp fix though it's the secure folder feature that some android 11 phones have under the quick tiles where the notification area is by pulling down two times until you see a buttons like screen rotation and Bluetooth etc. If you can't find it check under edit buttons in the 3 dot menu look for a button with a folder with a keyhole in it so this is a temp fix if you know how to use it. Also some features might be limited forgot what they were

If you are running android 11 it's probably a storage access issue because of the new storage policy thing which slows down loading times also if running an android with the secure folder feature you can install minecraft there and it would load faster in a separate space its just a temp fix though sadly
