The A/B button swap works as intended when it is enabled (i.e. B for ACCEPT and A for CANCEL) in version 1.17.41.

It appears that the Time for Stew achievement was added to Minecraft for Windows 10 Mobile as of 4 November 2019, bringing the total to 104 achievements and 2,400 Gamerscore. And now to actually unlock the achievement myself...
