Confirming this is not an isolated issue, all chests in a chunk become invisible and lose their inventories. Happened twice in the same chunk, and both instances occurred without a server restart between them. Seems to only require a chunk reload. Chests in a neighboring chunk (but within the same region) were unaffected in both instances. Other items driven by NBT data seem to also be affected, player heads in another chunk lost all data and a bell in that same chunk lost the bell part of the model until interacted with.
