When I /locate temple gives me the coordinates of a witches hut. I have run the command multiple times and it gives me the same ones every time.

That command doesn't even work for me.

Why does a witch hut fall into the temple category? Wouldn't a temple be a desert temple?

Temples are jungle temples, igloos, witch huts and desert temples.
