I summoned in a falling chest (/summon falling_block ~ ~1 ~ {Block:"minecraft:chest}) but the chest was invisible until it reached the ground.

Assuming you meant:
/summon falling_block ~ ~1 ~ {Block:"minecraft:chest"}
I can't get it to work with any block, but that is probably just me
