I added a video to go in, and the cow moved into the fence in an instant after I struck two without injury, and then died
Could you recreate that video with the debugging screen (hit F3) enabled? Also force a crash by pressing F3 + C for 10 seconds while in-game and attach the crash report (minecraft/crash-reports/crash-<DATE>-client.txt) here.
Are the animals looking like they're staying still then suddenly jumping to a new location? The game may be running slowly. Can you press F3 and take another screenshot.
