Villagers are not losing their professions when they have no workstation, even when it is the right time of day and they are free to move. They can still pick up professions, however.

Yeah, I did. They are free to move and there is no workstation near them but they still have their professions, and I have not traded with them before.
Cannot reproduce this when trying to test it myself. Can you please provide clear and consistent steps to reproduce this in the latest version if the bug is still occuring for you?
Pretty sure Jonah traded with the villager before, as that would match the reported behavior. See comment on MC-159010.
Make sure that they actually see the workstation being gone, they have to be able to reach the place and see it, then they reset.
