Hello, sorry for the very delayed response. This is no longer an issue for me, I couldn't get villagers to acquire random professions.

Edit: I'd like to note that I think my wording was weird, it wasn't random professions, but no workstations were available because other villagers claimed them (I saw them work in them.) I guess I should have said villagers lose their workstations for no reason and other villagers claimed them?

I'm in 1.15.2 - this is still an issue. I was going crazy trying to find out why my shulkers weren't coming to the overworld - I saw this post another one about the same problem, I checked the coordinates of the end portal in the overworld, and it was there. Thank you so much because I really don't think I would have found the shulker.

Yeah, I did. They are free to move and there is no workstation near them but they still have their professions, and I have not traded with them before.
