The bug
Structures like Jungle temples, Desert temples, Witch huts etc will generate in superflat in any biome. This seems to affect all presets except for Classic Flat, Redstone Ready, and The Void.

Not just biome_1 structures can generate in wrong biomes, all structures that can be put in the preset can generate in any biomes which is not an intended behavior. As I showcased in: MC-181533
To simply put it, all structures that can be generated will generate no matter the biome they are in. Including the following presettable structures: Fortresses, Endcities, Bastions, villages, and probably all other structures.
Except for Ocean monuments, when ocean monument is in a preset it doesn't let me click the new world button.
(It's pretty fun tbh. I'll definitely be playing some extra special super flat survival maps thanks to this.)
Came here to report this and saw this issue and a ton of duplicates. I would love it if this is kept as a separate option, but I won't get my hopes up. Peter K seems accurate in his explanation, but I also haven't found any woodland mansions. This could be from the mansion and monument being made of multiple structures. (possibly?)
Village is also created with multiple structures and I was able to find a village even if I was in an invalid biome for villages
Affects version 20w21a. I can confirm that structures of any type can generate regardless of biome, i.e. a plains superflat will have jungle temples, desert temples, ocean ruins, shipwrecks, etc. everywhere.
It should be noted that this bug is caused by adding "biome_1" to the superflat world generation preset, this is why it does not happen on Classic Flat, Redstone Ready, and The Void, they do not have biome_1 in their preset. It is also worth noting that while the structures do generate, they are not recognized by the "/locate" command.
