I was just looking around in my building world until I found a nitwit villager, except it had the texture of a leatherworker and I could trade with it.

Yeah, from the grass texture it seems like this is programmer art. Resolved as a duplicate of MC-141075.
Are you using a resource pack? Also, please provide a screenshot of this occurring with your F3 debug screen enabled.
