In creative on singleplayer when I was on a horse and shot an arrow up at myself it was bugging on top of me. It was in version 1.16.2.
The horse had no armor.
The bow had no enchantments.
I was aiming directly up.
I tried on 2 worlds and it had the same outcome.
I was not not using optifine or forge just pure vanilla minecraft.
All the gamerules were untouched.
This also happens when you are not on a horse.
Works with a crossbow and trident

I was able to recreate this in 1.16.2 with and without Optifine. Also, it can be done when you aren't on a horse. It seems to only happen in creative mode, and it doesn't matter the exact angle you fire the bow at, just that you 'catch' the arrow with your head.

I also managed to recreate this with a crossbow and somewhat with a trident. To consistently recreate this, type in the command "/summon arrow ~ ~3 ~". This will cause the stuttering arrow glitch every time, though you must be in creative.
