To preface, this is 100% vanilla Minecraft with no plug-ins or mods whatsoever, on the most recent stable version 1.16.3. The only thing I could've done to possibly create this situation was manually copying the files from the world's save under the .minecraft folder and pasting them into a separate folder on my desktop. I haven't even used the backup files at all.
This is a long video, but the initial bug happens at around 12:45. Under the f3 information, you can see the dimension is the End, but I am clearly in the Overworld. I am still able to collect the dragon egg and get the advancement for beating the dragon. It should be noted that it is eternal night similar to the End in this version of the Overworld, and you cannot sleep in beds.
Not shown in the video, I am able to return to my 'actual' Overworld by entering the nether in this bugged out End dimension and then exiting it. I can return to the bugged out End dimension by going into the initial end portal that caused this bug. When doing so, it appears to return to a specific state (my house wasn't blown up for example when I made a return trip). It should also be noted that when attempting to go back to the End Portal in the bugged out dimension, the world literally drops off into a void after traveling from coordinates (0, 0, 0) to around 500 x value or so.

No I have not, the only action I've performed with them is highlighting them to copy the files and then pasted those files into a separate folder as mentioned.

@unknown, I looked at your world folder. It appears that when you copy and pasted all the files from your world folder, you actually accidentally pasted those files into the DIM1 folder that is inside your world folder. The DIM1 folder is the folder that stores all of the information about the End dimension. This is almost certainly caused by an accidental copy and paste, and not by a bug, because in addition to the "data", "poi", and "region" folders that the DIM1 folder normally contains, the DIM1 folder of the world you posted also contains many files that should only appear in the root of the world folder.
It it possible to try to repair your world. I can't guarantee that it will fix everything, but when I tested this myself, everything appeared to work correctly. The two parts of your world folder that need repair are the DIM1 folder and the level.dat file. (The DIM1 folder stores information about the End dimension and the level.dat file stores a lot of miscellaneous information, including information about the dragon fight.) Since this was the first time you visited the End (meaning that there aren't any buildings in the End that need to be salvaged), you can simply delete the DIM1 folder and Minecraft will automatically generate a new one the next time you play in the world. For the level.dat file, I manually repaired it for you using iRath96's free online NBT editor. Delete the current level.dat file that is in your world and paste this one
[media]into your world to replace it. (Also, since this bug report already had a file named level.dat attached to it, Jira automatically renamed my fixed level.dat to level-1.dat. Make sure to rename the file I posted to level.dat before you open your Minecraft world.)
In summary, to fix your world:
Delete the entire DIM1 folder.
Delete the current level.dat file in your world and replace it with this one:
Rename the level-1.dat file to level.dat
