Projectiles freeze when going above the build limit in unloaded chunks

I noticed this when testing fallen_breath's ender pearl cannon in 1.16.3. The ender pearl goes into an unloaded chunk and freezes and becomes invisible. The /data command shows that it has Motion, but it still doesn't move unless you modify its position, in which case it resets its momentum and falls straight down.

Steps to reproduce:

1- load this world in 1.16.3: https://mega.nz/folder/faQkHLJT#XCfEuLbfTFPXwCaN30yJYQ

2- Go to -156, 64, -57 and throw an ender pearl straight up (use at least render distance 12)

3- After the explosions finish, the ender pearl will be frozen at 481, 268, -170 (make sure to fly there instead of just teleporting to load the chunks in between)
