Killing a mob in one hit using a weapon with Fire Aspect doesn't make it drop cooked meat

Easily testable across all game modes. If you one-hit a passive mob that drops meat with a bow shot, using a bow that has Flame on it, it will drop cooked meat. If you one-hit the same kind of mob with a sword, using a sword that has Fire Aspect on it (You'll probably need sharpness as well, diamond sword alone doesn't always one-hit) then the mob doesn't drop cooked meat.

Mobs need to die from firedamage in order for the meat to be cooked.

I think the issue here is the inconsistency.

Yeah I find it a bit odd that a flaming bow-shot that kills them in one hit cooks the meat but not a flaming sword-hit. I'm not sure which way Mojang intends it to be, but I think it should be both the bow and sword kill them and cook it.

I agree. I have a bow with flame that does a 1-hit kill to pigs and they drop cooked porkchops. I have a similar sword with Fire Aspect that 1-hit kills pigs also, and they drop raw porkchops. I wand my sword to cook the pork too. I think it is a bug.
