the piglins don't take not gold

What is the "mobGriefing" gamerule set to?

Can't replicate- Piglins only barter for gold ingots. Tested in both 1.16.5 and 1.17-pre3, they'll pick up gold items and will only trade for ingots.

I've had this issue too; I think it has to do with the items' pickup delay. Try right clicking directly on the piglin with the gold to workaround that.
