I've also had this problem when playing the snapshot.Β
What happens is when the game finally starts up, the first issue is that everything looks normal, except the words don't show up. As I find myself navigating blindly to my world, I see that item textures are missing. As in, a complete solid black. It doesn't affect the blocks themselves that are placed or already generated, just the items in your hotbar, inventory, recipe book, dropped items, held items (even in your off-hand!), etc. It also leaves the paper doll of your skin in the inventory menu as a solid black.Β
When I leave my world and end up at the menu as usual, everything is back to normal so that I can see the words again. When entering my world after the words come back, the textures are still missing (regardless of how many times I leave my world and enter again). This also happens in Creative Mode.
Unfortunately, my computer is refusing to take screenshots, so this is all I have (sorry!). Feel free to ask me for any extra information that is needed.
Edit: Figured out screenshots (I had to use f3+f2, ain't that weird?)! Hopefully this helps-

Please could you attach the crash report which can be found in minecraft/crash-reports/crash-<DATE>-client.txt. If for some reason you cannot provide this, please attach the full launcher log which can be found in minecraft/launcher_log.txt. Supplying the team with this information would help them to determine what the problem is.

I experience this at 100%, it makes the game unplayble since 1.17. However, instead of saying we got bad computers you could try to fix it, or ask to OptiFine as OptiFine fixes it

I'm withΒ @unknown, Minecraft worked before this 1.17.1 update.

I updated my drivers (to the newest version which is still 6 years old) and it worked so I'm lucky and have no problems anymore π , but similar things can't be simply ignored in the future, even more if a mod fixes a critical problem. It would make some people very dependent of mods, unnecessarily (if there a mod which tried to fix it)Β

I had tried downloading Optifine to see if it would help, but my computer crashed as soon as the game loaded. I can now say that my computer will not wake up.

violine1101, the link for minimum system requirements isn't working, probably Mojang updated it.

The minimum requirements for Minecraft are listed at the bottom of this page: https://www.minecraft.net/en-us/store/minecraft-java-edition
