[MC-269074] scaffolding_unstable model uses invalid cullface "bottom"

The block/scaffolding_unstable.json model uses an invalid cullface property "bottom" instead of "down" for some faces.

This leads to some faces not being culled properly:

This seems to be the only block model that uses an invalid cullface property.
