[MC-271005] Knowledge books with a max stack size over 1 consume all items in the stack when used

How to replicate:

create a world with cheats enabled
use the following command: give @s minecraft:knowledge_book[minecraft:max_stack_size=2] 2
make sure you're in survival mode
right click with the knowledge books
both books will disappear

Expected Behavior:

Only one book from the stack is consumed
