When you cross a chunk border, you usually get a sudden lag spike, even if all new chunks which are about to load in have already been generated. This issue seems to be new in 1.21.6 Pre-Release 1.
Steps to Reproduce:
Create a new world and let everything load in
Use F3+2 and F3+G to see performance and chunk borders
fly across and back on a chunk border and notice lag spikes
repeat the same steps but in version 25w21a, so you can compare
Observed Result:
in 1.21.6 Pre-Release 1, you get an unexpected lag spike Whenever you cross a chunk border
Expected Result:
Performance would not be degraded in the newer release.

Hey! Thanks for the report, but we could not reproduce the issue on our side on several different machines. The attached videos were not showing the border crossing between the same 2 section positions. I am closing this as “Cannot Reproduce“ for now, but feel free to provide better reproduction steps.
