Some Blocks Made of Iron Don't Use Iron Sounds

1.21.5 added new sound effects for iron blocks, bars, doors, trapdoors and pressure plates. However, other blocks made mostly from iron haven’t been updated to the new sounds and still use the old ones.

The following iron-derived blocks are affected by this:

  • All rail variants

  • Anvils

  • Blast furnaces

  • Cauldrons

  • Crafters

  • Hoppers

Proposed fix: change these blocks to use iron sounds instead of their previous sounds. The only exception is the anvil’s unique placement sound; don’t change that.

That is not a bug, they added the sound block.iron.break and block.iron.place, those sounds are shared by iron doors, iron trapdoors, heavy weighted pressure plate, iron bars and iron blocks.

Before they used the default sound block.stone.break and block.stone.place.

However blocks like anvils have a custom sound (in the case of the anvil block.anvil.break and block.anvil.place)

The other blocks that you mentioned share the sound block.stone.break and block.stone.place since they aren’t primarily made by iron (except the cauldron)

Tripwire hooks and jukeboxes used to have stone sounds, and now have wood sounds.

Redstone repeaters, comparators and levers used to have wood sounds, and now have stone sounds.

All of these changes were treated as bugfixes.

In other words, if a block has sound effects that don’t make sense for the material it’s made of, it’s a bug.

That being said, I would be okay with them only changing anvils, cauldrons and hoppers, because they are the ones that make the most sense. It’s up to them though.
